White Bean Hummus
- 1 15-ounce can navy beans, drained and rinsed
- ¼ cup light dairy sour cream
- 2 Tbls light mayonnaise
- 1 Tbls fat-free milk
- ¼ tsp ground cumin
- 1 Clove garlic, chopped
- ½ can chipotle chile in adobo sauce (optional) OR 1-2 tsp horseradish to taste
In a food processor combine beans, sour cream, mayonnaise, milk, cumin, garlic and if desired either the adobo chiles or the horseradish. Process until smooth scraping side of container as needed.
Transfer hummus to a serving bowl, sprinkle with chives if desired and serve with raw vegetables.
